General Care Taking good care of your FermZilla begins with cleaning and sanitizing the unit before and after use. The tank is made from food-grade PET, which is beautifully clear, but can be sensitive to long soaks in cleaners and acid-based sanitizers. In general, we do not recommend leaving products like PBW or StarSan soaking in the tank for more than an hour. If you're deciding between the DigiMash and the BrewZilla, there are a couple of key differences worth noting. One of our favorite features of the BrewZilla is the programmable mash steps and delayed start, which the DigiMash does not have. You can still step mash by simply raising the temperature manually on the controller, but the automatic steps are a convenient feature if you want to set it and forget it. The other major difference between the two systems is that the BrewZilla features a built-in pump for recirculating the mash. Recirculation is a great way to improve mash efficiency, but it is far from required for a successful brew day. Using an external pump with the DigiMash is also an option, and one can be integrated for mash recirculation quite easily. Simply connect the ball valve to the inlet of your pump, and then connect the outlet of the pump to our Sparge Arm Assembly. This model comes with the 35L DigiBoil, which has two built-in heating elements that run off a 110V plug. One element is 1000w and the other is 500w for a combined 1500 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage both elements to quickly go from mash temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s). The available toast levels are Medium, Medium +, and Heavy. It's important to understand that each toasting level creates different flavors in the oak; not a greater intensity of impact in your beer. Don't think of them as weak, normal & strong; they're each a different flavor profile. Heavy Toast French Oak chips will impart strong flavors of Clove, Spice, Smoke & Butterscotch; along with a small amount of Vanilla & Coconut flavor. From the inlet, water will enter the column via a special spray head which can condense 0.42 gal (1.6 L) per minute while connected to 100 psi mains water. You'll find that a super-fast flow rate isn't necessary to cool boiling steam into liquid. Unlike the distillation process where the distillate needs to be under a certain temperature so that ethanol doesn't evaporate from the liquid at a high rate, with boiling wort you just need enough flow to form the steam back into liquid. Simple! After the steam is reformed into liquid, it will drain out of the bottom barb where you can install 3/8" ID silicone tubing. Recapture that water in a collection vessel and save it for cleaning and sanitizing! Once again, be aware that the water coming out will be very hot. Caution: You will need to remove the Steam Condenser when you reach boil to manage the hot break and ensure you don't have a boil over when you reach boiling temperatures. Once you've completed that step, you can reattach the Condenser and leave it in place for the remainder of the boil. Warning: It is important that the output tube for this steam condenser is open to atmosphere. This will allow the condensed steam to exit freely. DO NOT put a valve on the liquid output or restrict the condensed steam in any way as this may cause your brewery to develop vacuum and implode or explode. DO NOT immerse the tube for the condensed steam in water. The outlet hose must be open to atmosphere and the drips of condensed steam must drip into your collection bucket freely.
