    This Carlsberg type yeast is the most widely used lager strain in the world. This strain produces a distinct malty profile with some ester character and a crisp finish. A versatile strain, that is great to use with lagers or Pilsners for fermentations in the 45-55°F (8-12°C) range. It may also be used for Common beer production with fermentations at 65-68°F (18-20°C). A thorough diacetyl rest is recommended after fermentation is complete.

        I made a Czech Dark Lager with OG of 1.050. After 4 days it was at 1.015 I did a D-Rest for 2 days. Cold crash after 7 days. I would call that quick for lager yeast.

        Consistent 75-76% attenuation. Leaves good body/mouthfeel w/ a beautiful but subtle dark fruit/floral aroma/flavor. Never any diacetyl in finished product but this dude does produce some major sulfur during fermentation. Aways IME cleans itself up though in 3+ weeks total ferment time. I LOVE this yeast.

        First time with this strain. Starter was a little slow to take off and once pitched it was a little slow getting started in the fermenter. Once it got started, it moved right along, going from 1.072 all the way down to 1.010 in 5 days. It definitely lets the malt come through.

        Great Yeast

        I don't always brew lagers but when I do, I use Wyeast Bohemian 2124 yeast. I've made a great Oktoberfest and Bohemian Pilsner with this yeast.
