Lovely yeast that creates the right dry bready tones needed to make a bitter a bitter.
I use this a lot on my British style brown. It has a fruity sweetness to it that complements the style quite nicely; I wouldn't use it on something I wanted to taste crisp or dry, but for sweeter medium-dark beers it's great. They're not kidding about the flocculation, I have almost double the trub in the bottom versus other strains when I rack to my secondary. The result is reasonably clear without filtration.I'm a fan of this yeast for the particular style I mainline, but don't expect it to work for everything. Should be great for everything from a nut brown to an ESB.I should also note that this tends to be a pretty slow starter, but once it gets going it can be quite vigorous. I've had batches that have taken several days to get started but filled my airlock with foam by the time the primary was done.
This yeast was specified in a sweet stout recipe I tried a while back. It fermented great, but the beer has a fruity note that really bugs me. While fruit character might be perfect for another style fermented with this strain, it gets in the way of the roasty toastiness of the malt in my stout.
I had to save this in the fridge for two months before using. It took awhile in the starter to get it going but it finally became active. Turned out great.
i've used this twice on two totally separate beers. one, a boont amber clone (REALLY damn close match with this yeast) and another an old ale.the bright and kind of tropical fruitiness was perfect for the amber, but really clashed with the old ale. i think i will use this yeast when i want that tropical strawberry/pineapple background to come through. would work really well for fresh pale ales and reds, but not such a good match for stouts, barleywines, and old ales. this is a really specific yeast with a great unique character that i think i've found some awesome uses for.
I've used this yeast twice and each time with great results. I like the flavor profile, not too dry, and a bit malty with nice fruity characteristics. My yeast starters smell like bread dough rising. I wonder if that's where it gets its name.
