I'm fairly new to all-grain, and this was my second kit. Almost 20 pounds of grains! Make sure you've got a big enough mash tun...I'm a fan of Innis & Gunn, so I soaked some oak cubes in bourbon for about 3 weeks, then added them to the fermenter on brew day. I bottled after a 2 week primary, and a month in secondary. For the 5-gallon brew, a batch-primed with only 3/4 bag of the corn sugar, which kept the carbonation low, and the beer silky smooth.Cracked the first one this week, and was pleasantly surprised with how great it tastes! Ended up right around 8%, and the low carbonation really makes a difference.
