I brewed the Jovaru Wit recipe from Omega's website. Fermented at 85F. It was done in 3 or 4 days and dropped out very quickly. It was in keg in 10 days. Finished at 1.006 with the described "Belgiany" character of spice and a nice body despite the low FG. Definite going on my brew again list as a great summer beer.
A great yeast if you are ready to try something a bit off the beaten path without going full saison or waiting months for brett. Jovaru performs much like kveik. Pitch as hot as 90+f, or stick with upper 60s. Let ferment at whatever ambient temp is, or keep the ferm chamber set at 67.5. High og or low, body temp or cool, this yeast will happily do its thing . Though less expressive at lower temp, it gives nice hints of what I percieve as bubblegum. And yes I agree that sounds terrible, but it isnt. Though not everyone agrees on calling it bubblegum (some say it is a little bit clove without the spiciness) I've yet to have anyone not like it, even my coors light or die buddy (one in every group.) I have paired jovaru with the Walter Wheat kit multiple times. Both with and without the raspberry rock candy were delicious. I even tried one where I subbed out the raspberry candy for 2 small ghost peppers cut in half (Walter Heat), and that still has my vote for the best beer I've made yet. Are you are tired of using only us05 and wlp001 at 65 degrees for clean ale, or only voss and hornindal at 95 for a 5 day grain to keg with heavy citrus esters? Do you want to try a new yeast but not alter your ferment process? Give jovaru a shot. Treat it just like you would treat your usual yeast and see what it gives you. It hasn't let me down yet. Used this yeast in a Tank 7 clone recipe. Just bottled today and an I am anxious to taste the carbonated result. Flat sample tasted great.
Made a 2-liter starter, pitched into a 1.068 bière de garde. Vigorous fermentation was evident in only 4 hours. This one is in warm ambient temperatures, and on day 7, is still showing bubbles in the airlock. Hoping it finishes nice and dry.
