I stuck to the recipe and I'm blown away. This is exactly what I was shooting for, and tastes very similar to paulaner's helles, granted I've never traveled there. Extremely smooth, but still crisp, with just a tiny bit of mid palate sweet (very subtle).I fermented with 34/70 (love this yeast), at 55F. Raised to 62 after a week for D rest. I biofine anything pale, and I'm really glad I did this one. It's really clear which helps me "taste" crispness. It's only been a month and it tastes better than I could have imagined. I know I should age more, but it's going to be really challenging to pass the tap.I will definately repeat this one.
