German Hefeweizen | 5 Gallon Beer Recipe Kit | All-Grain

    Description

    • This German-style Wheat Beer recipe allows Hefeweizen yeast to shine at the forefront of the flavor profile. One of most popular kits ever!
    • Includes a single addition of Northern Brewer hops
    • Estimated ABV: 4.5%
    • Estimated IBUs: 13
    • Makes 5 gallons of finished beer

This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This is a true German-style Hefeweizen recipe using 60% White Wheat malt and 40% 2-Row malt. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Despite the simple recipe, this is one of our most popular ingredient kits. Our German Hefeweizen is a customer favorite that has brought home many ribbons.

If you want to put a little spin on this recipe, add 8 oz of Caramunich and 4 oz of Chocolate malt to make a Dunkelweizen!

    • Makes 5 gallons
    • Estimated Original Gravity: 1.046-50
    • SRM (Color Range): 7
    • IBUs: 13
    • Estimated Alcohol Percentage: 4.5%

Our recipe kits DO NOT include grain bags, yeast or priming sugar. To find our yeast recommendations, choose your preferred kit option above and then select the drop-down menu under “Yeast Options”.  For more info, click on the recommended yeast(s) below in the “You Might Also Need” section below. Easy first brew, fantastic outcome!

Just getting back into brewing after a 20+ year hiatus. I also purchased the Brewzilla Gen 4, 65L, 220V and Fermzilla from MoreBeer and this was my first brew with the new setup. I must say, I was pleasantly surprised at how well this came out. If you are familiar with Widmer Brothers Hefeweizen, this is pretty much spot on but with improved mouthfeel and head retention. Had my first pint today after a hard day of yardwork and I must say it put an immediate smile on my face. A second pint with dinner and I was on cloud-9. Very drinkable, super refreshing and just what the doctor ordered for hot summer days. Wife usually turns her nose up at beer but even she liked this so that says a lot in my book!I hit all my numbers as predicted by Brewfather with a final 5.7 ABV. Followed the Morebeer recipe exactly and used a starter of WB-06.So awesome to be able to brew something that came out this well on the first go! Thanks, MoreBeer gang for this awesome kit and great first brewing experience!

        great German Hefeweizen

I brewed a Paulaner Hefeweizen clone once and it the best Hef that I ever made and it was from dry extract with liquid yeast.I just drank my first glass of this and it is just as good. All grain kit with Munich Classic dry yeast (way to hot to ship liquid not). I started with RO water and used water adjustments based on Brewfather. I fermented in my SS Brewtech Unitank with Glycol chiller at 68F for most of the time them when it was close to final gravity I dropped the temp by 1 degree a day then shut off the blow off valve after 3 days. The psi came up to about 7 psi and I left it there for another 3 days then crashed and kegged. Carbonated for 3 days and just poured my first glass today. The balance between clove and banana was perfect. I was pleasantly surprised because I was afraid that it was going to be a banana bomb based on samples taken before I kegged it.I am gong to do the dunkel heffeweizen next but will do this one again real soon.

        Very nice Hefeweizen

Kit came fast and made a great Hefeweizen. I chose the Wyeast WY3068 Weihenstephan Weizen Yeast. This gave the hefeweizen a nice light clove banana wheat flavor with a drier finish. If ordering the yeast, being a liquid that needs to be kept cold, order with the coldest option. I ordered with a cold pack and insulated pouch, both items were warm when arrived at my house; good thing I was brewing that day. If you are a beginner to all grain, directions are lacking and somewhat confusing since they are made for extract brewing.

        So.good.breq it!

This was an absolutely fantastic Hefeweizen, it was almost indistinguishable from Paulaner. Very popular with friends and family and visually indistinguishable. My only complaint as a brew in a bag Brewer is that I need to mash longer or remill the grains in order to increase efficiency. Absolutely fantastic and I will certainly buy this again. Follow the directions and you'll look like a pro.

        Nice

I have brewed the extract version of this kit many times, and every time it came out perfect. The all grain came out a little thin and lacked flavor. This could have been brewers error during steeping, but we will see next time I brew it, which it will.

Great kit. Came quickly and good results. I used Irish moss to clarify. Yum!

        Pair This With Omega Bananaza

I figure this would be pretty awesome with most of the suggested yeasts. I initially chose the dry yeast but came back and got the new Omega Bananaza yeast. The airlock smells heavily of bananas. The final product tastes of banana's but its more so that the clove flavor is completely missing. I don't think you can go wrong with this kit, but I suggest giving the new yeast a try.

        Some helpful tips!

The all-grain version of this kit makes awesome beer. The ingredient list looks simple, right? Only one small hop addition, two grains, and one yeast. And it is simple. However, the details are very important if you want to maximize its potential. Here are some pointers.First: if you're going with a dry yeast, ignore the dry yeast recommendation in the kit instructions. The dry yeast that is going to make the most of this kit, as of 2021, is the "Munich Classic" yeast by Lallemand. This "Munich Classic" strain is a different yeast from the plain "Munich" yeast, and it's very closely related to the "Weihenstephan w68" strain that's used in the world's best hefeweizens.Second: If you do use the Munich Classic dry yeast or one of the liquid W68 strains, you can brew this warmer than suggested and the yeast performs great. I fermented it without temperature control at 62 F ambient temperature (the side of the carboy measured 72 degrees during the peak of primary fermentation!) and got a nice, well balanced flavor. The main thing to be aware of if you do let it ferment at 72 is that this yeast is a powerhouse mega beast and will blow your airlock out with great fervor. Use a blowoff tube for the first few days until the krausen settles...don't even try using an airlock before then. Use a larger fermenter than you think you need... my 5 gallon batch in a 6.5 gallon carboy still blew foam out of the blowoff tube.Third: If you're using the all grain kit, wheat can be a bit tricky to mash. If you use the standard "60 minute mash" approach, you're likely going to have low efficiency, especially if you don't sparge. Hefeweizens are usually decoction mashed in stages which can help with efficiency, but instead of going to all that trouble, you can instead try a longer mash (90 minutes, for example). Use a mash paddle or a big whisk to really give the grain the business. If you batch sparge, let it sit for longer than you usually do. Measure your wort's gravity after the first batch sparge and if it's lower than expected, do a second batch sparge and boil it all down to your target volume. You'll get it to work.

        Delicious

This is the only recipe kit that I have bought multiple times so far. It is absolutely delicious especially if you add some orange peels and/or coriander.

I haven't brewed it yet, but as the title says it looks good. I'll be using citra whole hops to make a citra weizen

        Legit Bavarian Hefeweizen!!!

Legit! I travel to Munich for work 2-3 times per year and wanted to brew a legit Bavarian Hefeweizen. I used the wyeast 3068 and made a starter. I adjusted water chemistry for Munich. I also did a ferulic acid rest at 112F for ten mins before ramping up to 152 for 60 mins. I fermented at 64F and fermentation was very very active within 12 hours. Fermentation was complete in 7 days. Cold crashed to 36 degrees for 3 days and then kegged and carbonated. So 10 days, grain to glass, 11 if you count the 24 hours under 40 psi to get it carbonated. I highly recommend this kit. It is absolutely delicious with a great clove spice and subtle banana aroma.

        Weissbier just like I like

This is the style I have brewed the most. This kit came out very tasty, and I was drinking it within 2 weeks. Added 1/2 lb. of rice hulls, but I suspect I would've gotten better Grainfather efficiency without them.

        Great, simple brew

This is an easy ale to brew. It is a favorite summer beer. Yes, the fermentation is a bit crazy during the first 24 hours. The first time I brewed this beer, I had to keep cleaning out the air lock. Got smarter on the second batch and replaced the air lock with a piece of tubing into a half gallon jar.

A good German hef - be careful!

a very straight forward beer. A good test of your water and sanitizing. Any off flavors will show up because it has almost nothing to hide them.

2nd all grain brew. Been brewing Weise bier for a few years now with Mr Beer Kit. After living in Germany for years I appreciate a great tasting brew. Taste tested after transfer to my bottling bucket and really impressed with the taste and flavor.

        Good Hefeweizen

I will be buying this kit again.I liked the higher wheat to barley ratio, and the price is right.I did a hybrid brew in a bag batch sparge method. O.G. was 1.054 final was 1.010.I used Wyeast 3068, 1 week in primary @ 68F then to a keg.The results are good.Next batch i will try my first single decoction mash.Prost :)

        What a Hefe!

This is one the best smelling beers I have ever brewed. During the boil it smelled like fresh sweet bread. During fermentation the combination of the wort aroma and Mangrove Jack's Bavarian Wheat yeast were heavenly. The finished product is awesome! What a great daily drinking beer. It finished at 5% and has great banana flavor with a hint of clove and spice in the background. Why are you still reading this review? Buy this kit!

        A No-Nonsense Hef

A very easy brew that makes a really classic Hefeweizen: easy-drinking sweet with a thick, creamy head. My friends that don't like beer loved the taste of this and my friends who do like beer kept sneaking into my fridge for another bottle.

        Great first quencher

This brew is fantastic. I did like recommended and fermented at 62 degrees. I added 1lb of dme, 1 cup of honey and the included corn sugar to the boil just to bring up the abv a little. Finished at about 6%. I will be brewing this annually
