Fermentis | SafLager™ S-23 Lager | Dry Beer Yeast

    Description

    • S-23 is highly recommended for making fruity and hoppy lagers
    • Originating from Berlin, Germany, this lager strain can ferment as high as 64°F
    • Fermentis active dry yeast offers reliability, ease-of-use, and consistency to home and professional beverage makers across the world

Great to keep on hand, either as a backup, or as a go-to yeast for your lagers. Produces a nice lager taste: clean and crisp.

Finally there is dry lager yeast we can recommend. This bottom fermenting yeast is widely used by Western European commercial breweries. This yeast develops the best of its flavors when fermented at low temperatures (54-59°F) yet it can still produce "lager characteristics" at higher temperatures. We recommend that you keep it between 54-59°F to produce the best beer possible.

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

    • Attenuation: 80-84%
    • Sedimentation Time: Fast
    • Alcohol Tolerance: 9-11% ABV
    • Optimum Fermentation Temp: 54-64°F

        Good go2 for a lager

Getting down with chillness. Seems to like temperatures 48- 58. Backed with the propper start has a nice smell.

        Really Nice Yeast

Used in pressure fermentation with a pilsner recipe and worked great even at room temperature. Will use again.

        Great Lager yeast

Use it to make Torcido, a Mexican Lager kit from More Beer.I do pressure fermentation in a spike flex. I added 12 lbs. pressure at pitching and the yeast took off. Temp was 71 in the room. I have a 15 lbs. relief valve and it went to 15 lbs. in a day. Done fermenting in 9 days, cold crashed for two and now I have a great Mexican lager everyone enjoys. Love pressure fermenting, don't have to worry about temp and had 6 batches turn out great so far.

        Special Trial

Was looking for a yeast that would work in lower temperatures. Very veral, and is still working 3 weeks later. Should be a good batch.

Fermented lager in 4 days at 54 degrees

Used 4 packs in a 12 gallon batch. This stuff worked great. The beer is still lagering so hopefully taste matches performance once it is carbonated.

        Clean flavor

I used this in a Maris-otter based Helles. Came out very clean when pressure fermented at 10 PSI and 68 degrees Fahrenheit. No notable off-flavors under these conditions.

        Easiest Lager yeast

I've recently started making lagers after acquiring an old fridge and temp controller.I have tried both SafLager and WhiteLabs. I have had most consistent results with both SafLager strains with both starter as well as just sprinkling in the wort once the proper lager temp is acheived.Won a Bronze medal for my Munich Helles with a 2-l, 3 day starter of 2 S23 packets with 1 cup of Breis Pilsen DME.

        This Product Really Works

I used the dry yeast because I didn't have any luck with the liquid yeast. This product came through for me. It's all part of a learning experience that now is more satisfying, now that I found a yeast that really works.

        Nice and clean

It does the job. I've used this yeast twice in a Martzen and it works well. I ferment at 53 degrees and was able to hit FG in about 18 days at the temp. I am currently fermenting a German Pils with this yeast and after 7 days it has fermented from OG 1.045 to 1.011, I am letting it continue to hopefully get to 1.008.

        Easy to use yeast

This is really good stuff. I hydrate it, then pitch it. The end of the next day, I have a rolling fermentation. I could probably get fermentation going faster with a starter but hydrate-and-go is to easy.

I brewed an Eisbock in Oct 2016. At the 2018 Arizona Society of Homebrewer's Springfest I won gold and BOS. At the first round of NHC 2018 San Diego I won gold. Love the flavors this imparts to the beer.

Pitched to a cream ale. Cold conditioned. I was Worried about bottle conditioning, but it carbonated well and has a nice lager flavor.

Easy Start and Very Reliable Dry Lager Yeast

I kept this yeast as a backup to liquid yeasts but decided to give it a try. I made a Stella clone and pitched this yeast directly on well aerated wort. I saw yeast production within 12 hours at 70 degrees and it stayed active down to 52. Clean and crisp. I'll use this as a "go to" for lagers and pilsners.

        Love this versital lager yeast

I can't say enough about it. It makes a great kolsh if you start warm and ramp down and great lagers starting cold with a late ramp up for DMS blow off. Best choice really for a clean and crisp lager.

Great for when your liquid yeast quits or fails to start. Keeps for a long time. Buy a few even if you are planning on using another brand of yeast, just in case...Works best if you grow it up in a starter.
