White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! Slightly phenolic and tart, this is the yeast used to produce Wit in Belgium. This yeast is very active when it peaks its fermentation cycle. Pitch at 66-68°F and let it rise up 1-2 degrees per day and hold it at 72-75°F for 7-14 days. It would not hurt to leave your witbier in the fermenter for an extra 7 days to allow the yeast to flocculate out and clean up its environment. PurePitch® Next Generation—now with more yeast, get a foolproof fermentation without a starter! Just twist the cap & pitch! Why PurePitch Next Gen versus other options? Typically yeast manufacturers use a range for how many yeast cells are going into each package. This can vary widely, especially from strain to strain. Next Gen offers a far more precise cell count across all strains allowing you to use the Whitelabs exclusive pitch calculator. Simply scan the barcode on the back of each package to be taken to their online calculator. Enter the volume, strength, and pitching temperature of the wort you are fermenting and the calculator tells you exactly how much yeast to pitch. You will be fermenting like a professional brewer, using the same concentration of yeast every time and enjoying more consistent results. Don't need a full package? Clean, versatile, and reliable, it’s ideal for brewers seeking subtle depth without compromising balance at an unbeatable value
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Ferment between 59-72°F
WEST COAST is a refined evolution of the classic American ale strain engineered for modern brewing while honoring its proven roots. It delivers the same clean, dependable performance as CALI, with just a trace of fruit character that lends a quiet depth to the final beer. When fermented under pressure up to 12 PSI, WEST COAST can be pushed warmer to help reduce turnaround time while producing an even cleaner profile with its subtle fruit character pushed further into the background. This nuance stays well in the background, complementing rather than competing with hops or malt. Ideal as a house strain, WEST COAST can refresh a Flagship recipe or anchor a new one, offering robust, reliable fermentations every time. Designed for simplicity, it can be pitched directly into wort no oxygenation or rehydration required.
Flocculation: Medium to High
Fermentation: Range: 59-72ºF (15-22°C)
Pressure-Ready: Performs great under pressure up to 12 PSI
Attenuation: Approximately 75–84%
Alcohol Tolerance: 10% ABV
Direct Pitch: No rehydration needed
Reliable & Consistent: Every batch undergoes PCR testing for quality
High Cell Count: 15g per sachet—over 36% more than standard 11g dry yeast packs
Dosage:
One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.
Like all CellarScience yeast, WEST COAST offers professional-grade performance for both homebrewers and craft brewers at an unbeatable value. If you love the clean versatility of CALI but want a touch more character, West Coast is your next go-to strain.
OYL-090 offers a unique profile of lychee, pear, and tropical fruit cup and bolsters the sweet aromatics of modern IPAs
Most expressive when fermented at 90°F+ but still reveals character at its lower temperature range
Double pitch size with a minimum of 225 billion cells—twice the size of the standard yeast pitch
Proprietary propagation methods generate fresh, metabolically strong yeast cells and optimal biomass
Omega Yeast is founded on curiosity and innovation, expertly producing common workhorse varieties and many unique strains
Espe Kveik from Omega offers a unique flavor profile of lychee, pear, and tropical fruit cup. It can bolster the sweet aromatics of modern IPAs, but is versatile enough for your house pale ale or exotic seasonal brews. Espe is traced back to the village of Grodås in Norway and has an exceptionally wide fermentation temperature range. It's most expressive when fermented at or above 90°F, but you'll still pick up its character when fermented at lower ale fermentation temps.
Kveik refers to traditional Norwegian farmhouse brewing yeast that has been passed down from one generation to the next, literally being harvested and repitched for centuries. Over this long period of time, kveik developed certain characteristics that distinguish it from modern brewer's yeast. In general, kveik has a very high heat tolerance and will produce a consistent flavor profile across the fermentation temperature range. It's also a fast fermenter, highly flocculent, and has an above average alcohol tolerance.

Really strong and fast fermentations
Best strain to ferment out in touch conditions
One of the most popular, classic Champagne strains
Low nutrient requrements
The classic Champagne yeast. With a fast fermentation rate, high alcohol tolerance, and low nutritional requirment it is one of the easiest yeasts to ferment. Allows varietal character to shine through while accentuating stone fruit and citrus. Able to ferment under higher pressures. Does not ferment Malic acid so natrually produces fresh wines with crisp acidity. This makes it a classic choice for fruit wines, meads and ciders. Top choice for doing secondary fermenation in the bottle for natural carbonation. One of the most popular yeast strains in the world. Can handle lower fermentation temperatures.
Start Time: Fast
Alcohol tolerance: 15%
Nitrogen Demand: low
Yan Requirement @ 23 Brix: 220 ppm
Production of volatile acidity: Low
Production of SO2: Low
Ease to Ferment with MLF: Good
Yeast type: Bayanus

Optimal Fermentation Temp: 45–90°F
Proper yeast hydration helps ensure a healthy fermentation. For every gram of yeast, mix .25 g of FermStart yeast nutrient with 25 ml of sterilized tap water between 104–106°F/40–41°C. When water reaches 104°F/40°C, sprinkle yeast into water and stir gently. Allow the slurry to stand undisturbed for 15 minutes and then stir again. For every gram of yeast used add 25 ml of clean must to the yeast slurry and let stand 15–20 minutes. If necessary, use additional must to adjust yeast slurry to within 18°F of must temp before pitching. For a complete nutrient schedule sufficient for most fermentations, add 1.5 g of FermFed DAP Free per gallon of must at the first sign of fermentation and 1 g of FermFed per gallon of must after 1/3 sugar depletion.

Produces beers with dominant apple and pear flavors, complemented by subtle notes of tropical fruit and citrus
Multi-Strain Kveik Yeasts are original blends of kveik yeast cultures rather than isolated single-strain yeasts
Ferments effectively across a broad spectrum (59-100°F), offering flexibility for various beer styles
Achieves complete fermentation in as little as 72 hours at optimal temperatures (88-95°F), speeding up the brewing process
Perfect for IPAs
Ebbegarden multi-strain originates from Ebbegarden farm in Stordal. The flavor and aroma primarily come from apple and pear, with secondary notes of tropical fruit and citrus. Ebbegarden ferments well between 15-38°C and will ferment faster at higher temperatures. At an optimal temperature of 31-35°C, you can expect fermentation to take up to 72 hours. Ebbegarden is perfect for IPAs.
Ebbegarden kveik comes from Ebbegarden farm in Stordal, Norway. Ebbegarden has traditionally produced fruit, which is believed to be the source of the fruitiness in their kveik. During the Viking age, the mild climate made many Vikings settle down to fish and farm the land in Stordalen, and the first church was built in the 1100s. Beer and spirits were a big part of celebrations and gatherings for birth, confirmations and burials, and people made their own beer with kveik, especially for these gatherings.
The Multi-Strain Difference
Kveik Yeastery's unique multi-strain kveik yeasts capture the true essence of traditional Norwegian farmhouse brewing, delivering a depth of flavor and robust fermentation unmatched by single-strain alternatives. While other suppliers offer isolated kveik strains, Kveik Yeastery is the only source for authentic, dried multi-strain blends, providing brewers with the complex, nuanced profiles that define classic kveik. These diverse blends offer a superior brewing experience, unlocking the full potential of this remarkable yeast.
Flavor and Aroma
Primary flavors: Apple and pear
Secondary flavors: Tropical fruit and citrus
The intensity is medium at high fermentation temperatures, and at lower temperatures, it will be less intense.
Fermentation
Ebbegarden ferments well from 59°F up to 100°F. The higher fermentation temperature, the faster fermentation. At the optimum temperature 88-95°F expect fermentation to finish in 72 hours. When fermentation is done at low temperatures you can expect fermentation time to increase. For high gravity beers, we recommend users to pitch two packs of yeast and add yeast nutrition to ensure a healthy fermentation.
Pitching
Pitch directly into wort by sprinkling it across the surface, or rehydrate yeast. For fermentation below 64°F, or high gravity, increase pitching rate to 2.25 g/Gal.
One 7 g sachet treats 5 to 8 gallons of wort.
One 300 g brewery pouch treats 8.5 bbl of wort.

Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation. Known to be a slow starter.
The trick to fermenting a Saison is to pitch at 66-68F and raise it 1-2 degrees per day until you get to 85F. Yes, that is correct...85F! This yeast is so moody that you have to keep giving it warmth towards the end because it gets lazy and wants to go to sleep. Hold at 85F for 3-5 days until terminal gravity is reached then transfer off of yeast bed to bottling bucket or keg.

A great all around German wheat beer strain!
A complex alternative to the standard German wheat strain profile. This strain produces apple, pear, and plum esters in addition to the dominant banana character. The esters are complemented nicely by clove and subtle vanilla phenolics. The balance can be manipulated towards ester production through increasing fermentation temperature, increasing the wort density, and decreasing the pitch rate. Over pitching can result in a near complete loss of banana character. Decreasing the ester level will allow a higher clove character to be perceived. Sulfur is commonly produced, but will dissipate with conditioning. This strain is very powdery and will remain in suspension for an extended amount of time following attenuation. This is true top cropping yeast and requires fermenter headspace of 33%.

Our top choice for Seltzers — highly efficient at metabolizing simple sugars with minimal off-flavors (low fusel/sulfur)
Amazing house strain – for neutral-profile ales
VELO delivers – rapid fermentation while maintaining a clean, neutral profile
Doesn’t require temperature control - Loves to ferment Hot
Ferment between 60-94°F
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Amazing as a House Strain
VELO is a high-performance ale yeast selected for speed, flavor neutrality, and wide temperature tolerance. In internal sensory comparisons, VELO’s ester suppression and clean finish exceeded CellarScience CALI, while offering faster kinetics and a wide operating range that, within reason, can substantially reduce the need for temperature control. We’ve found it to be a dependable house strain across styles, especially for hop-forward ales. delivering clean results quickly while staying remarkably forgiving across real-world fermentation conditions
Why It Works in Seltzers
For hard seltzer production, VELO excels thanks to highly efficient metabolism of simple sugars (“mono- and disaccharides”) with low fusel and sulfur byproducts when supported by a complete nutrient regimen. When developing our Seltzer nutrient Dynamo 800 we tried many yeasts and Velo was consistently the best. From there we tweaked the formulation specifically for Velo with over 60 fermentations. Across broader sensory feedback beyond internal bench work, VELO consistently presented as noticeably cleaner than several common industry benchmarks, delivering a true neutral, blank-canvas base that stays out of the way of your seltzer flavor additions.
Lagers Fermented at Warmer Temperatures (Sometimes called pseudo-lagers)
VELO excels in this role by delivering a clean, lager-like profile at ale fermentation temperatures. Its wide operating range (60–94°F / 16–34°C), fast kinetics, and low ester/phenol expression let you run lager-style recipes in the mid-60s to low-70s °F without temperature control. When you ferment under pressure (up to 12 PSI), you can push these lager-like beers toward the upper end of VELO’s range right up to 94°F while still maintaining a neutral, crisp finish. High attenuation and medium–high flocculation help the beer finish dry and drop clear quickly, making VELO an amazing house strain for clean, lager-like beers on an ale timeline.

Ripe honeydew, papaya and tropical melange, white peach and fleshy pear. Vista hops are the most recent release from the USDA public breeding program. The public hop breeding program is unique in that it exists to broadly benefit the entire hop and brewing industries, whereas private programs look more at explicit private financial gain. The USDA public breeding program bred the genetic hop base on which American craft beer was built: Cascade, Centennial, Cluster. And continues to innovate to adapt towards new DDH hazy, juicy IPA brewer and consumer preferences with releases like Cashmere, Triumph, and now Vista.
Rhizomes should be planted immediately for best results. If your area is still experiencing frost then you can plant them in a planter indoors until it is safe to transplant outside. The first years crop will generally be smaller than subsequent years. Since these are live plants, we cannot guarantee they will grow, so we recommend buying two of each type to help ensure their success.
Shipping Restrictions:
Due to agricultural restrictions, we can only ship rhizomes to addresses that are in the United States, excepting Hawaii, Oregon, Washington, and the counties of Bonner and Kootenai in Idaho. Unfortunately, we cannot ship these to international locations including APO/FPO addresses.

Through this genetic testing, they have determined WLP067 Coastal Haze Ale Yeast Blend to contain the STA1 gene (glucoamylase), a potential indicator of Saccharomyces cerevisiae var. diastaticus. Brewers yeast are natural hybrids, which make it possible for certain strains to display elements of the STA1 gene. These strains have the ability to utilize some dextrins (unfermentable sugars), resulting in higher levels of attenuation than what is considered typical. After using this yeast strain we found out that it can sometimes produce a Belgian Character and sometimes not. Try this yeast with your big Belgians as well as other unique hybrids and you will find yourself pleasantly surprised. We would not recommend it for creating classic true-to-style variations of Barleywines, Imperial Stouts, Strong Ales or any other high-gravity style where Belgian flavors would not be appropriate.
